recipe categories / sides and vegetables / vegetables Rosie's Grilled Guacamole Courtesy of My H-E-B Texas Life Magazine Ingredients: 4 medium size hass avocados, cut in half, remove stone and peel 1 sweet yellow onion, cut into 8 wedges 2 tomatoes, cut each into 4 wedges 2 jalapeño peppers, cut each in half, remove seeds and stems 4 H-E-B Ready, Fresh, Go!® Garlic Cloves 2 Tablespoons H-E-B Olive Oil 1/2 teaspoon H-E-B Texas Originals Beef or Chicken Fajita Seasoning Juice of 1 lime 1/4 cup chopped fresh cilantro Salt and pepper 1 box (16 oz.) H-E-B Baked Corn Tortillas, cut into chips Directions: 1 Combine avocados, onions, tomatoes, jalapeno peppers, garlic cloves, olive oil and fajita seasoning in a large zipper bag. Gently turn the bag over several times to coat ingredients. 2 Spray a grilling mesh with no-stick spray and place on a foil lined baking sheet. Heat the gas or charcoal grill to medium low (300°F). Place seasoned avocado mixture on the prepared grilling mesh and place the mesh directly on the hot grill. Close lid and cook for 5 minutes. 3 Chop grilled guacamole ingredients and combine in a large bowl with the lime juice and chopped cilantro. Season to taste with salt and pepper and serve with the baked corn tortilla chips.
